This walnut crusted fish recipe is very simple and quick to prepare and cook, but is elegant enough to serve at a dinner party.
You could use any fish fillets for this recipe – whatever looks good on the day.
If you’re on a low carb diet, then you could substitute wheat bran for the oatmeal and use soy flour or protein powder for dusting and this would come in very low carbs.
The flour is to help the egg cover the fish so that the walnut coating will stick and not come off during cooking. So as long as what you use is floury in texture and carries no flavouring, it will be OK.
I would serve it with some buttered new potatoes and broccoli. If you’re low carbing, you can afford one or two small new potatoes but that’s your choice. Serve yourself extra portions of vegetables to help you fill up.
Walnut Crusted Fish
4 good sized fish fillets – skinned and boned
flour for dusting
1 tspn mustard powder
2 eggs – beaten
1 oz (100g) oatmeal
2 oz (100g) broken walnut pieces – crushed quite finely
butter for frying/olive oil – your choice
Wash and dry the fish fillets.
Mix the flour and mustard powder on a plate and season with pepper. Mix the oatmeal and walnuts on another plate.
Coat the fillets in the flour mixture, dip into the egg and then coat in the walnut mixture. Make sure the fillets are well covered, patting the mixture on where you see gaps.
Heat your butter/oil in a frying pan and fry the fillets about 3 minutes a side until the crust is crispy and the fish is cooked through.
Serve immediately with the juices poured over – mmm… delicious.
