This smoked salmon appetizer is simple to make.
It would be good as a first course for a dinner party or as part of a buffet or drinks party. Or you could even make mini ones for canapés using crackers or crostini (tiny pieces of Italian bread)
The mustard sauce is a delightful mixture of hot, sweet and fresh.
You could use it as a dip for lots of other occasions.
The preparation can be done in advance, just leaving the bread to toast and the appetizer to assemble before serving.
Buy as much smoked salmon as you can afford – the minimum is a slice per toast round and try to drape it over the sides, as you can see in the photo. Sliced french stick is perfect for this, it is just the right size and shape.
If you can find fresh dill, that would be great. If you’ve only got dried, then stir it into the mustard sauce so that it rehydrates in the liquid. I would add it to the olive oil and leave it for 5 minutes or so to let the oil soak into the dried dill.
Smoked Salmon Starter
4 slices crusty bread – toasted
4 smoked salmon slices
4 teaspoons capers
Salad leaves, chopped onion, diced cucumber
1 tablespoon dijon mustard
1 tablespoon sugar
6 tablespoons olive oil
2 tablespoons white wine vinegar
handful fresh dill – chopped
Whisk together all the mustard sauce ingredients except the dill.
Toast the bread and put each onto a serving plate with some prepared salad.
Lay the smoked salmon on top – you can be as generous as you like with it.
Season with a few twists of black pepper and some lemon squeezed over.
Give the mustard sauce a good mix and drizzle a spoonful on.
Scatter a spoon of capers over the top.
Sprinkle some finely chopped onion and dill on top.
Put a lemon wedge on each plate.
Serve any extra sauce (there will be some) so people can help themselves.
