Peanut Butter Popcorn Balls Recipe


Peanut Butter Popcorn Balls made with PB2 Organic Powdered Peanut Butter, popcorn and marshmallows are a fun treat for both kids and adults! They’re easy to make, fun to eat and can be ready in under an hour.

Much like these treats, this peanut butter recipe is an easy snack to make and lots of fun to eat. 
It might even bring back childhood memories of eating Halloween popcorn balls or even Christmas popcorn balls!

Either way, they’re really delicious especially because they’re made with PB2 Organic Powdered Peanut Butter. 
I’ve been using PB2’s powdered peanut butter for a while now.
It’s so convenient, and I like adding it to my morning protein shakes.
I used it to make this Peanut Butter and Jelly French Toast Casserole recently, too!

This recipe gives you directions for how to make peanut butter popcorn balls with marshmallows.

Some popcorn ball recipes call for liquid corn syrup in the ingredients, but I’ve saved you the trouble of having to boil it and use a candy thermometer. I think using the marshmallows is so much easier. You can thank me later. 😉

Which popcorn do I use, white or yellow?

I chose to use yellow popcorn instead of white popcorn.
Yellow popcorn pops up larger than the white does. 
Also, the yellow is a bit sturdier, so will hold up better when combined with the peanut butter marshmallow mixture.
You will be able to see a difference when you’re at the store and can compare them, so go for the yellow.

Here’s what you’ll need to make these popcorn balls with peanut butter – 

  • Oil
    you can use canola, vegetable or olive oil
    For this recipe, I used canola. I also used a small amount when melting the chocolate chips.
  • Uncooked popcorn kernels 
    Face it, you won’t have popcorn balls without some popcorn!
  • Butter
    Plus you’ll need some additional butter for rubbing on your hands when forming the balls. You can also use cooking spray.
  • Miniature marshmallows
    I’ve found that those melt the fastest, so it’s more convenient and a time saver.
  • PB2 Organic Powdered Peanut Butter
    You’ll need some to mix some of the powder into the melted marshmallow. You’ll also mix some separately with water to drizzle on the top.
  • Pure vanilla extract
    As I’ve told you in many previous posts, using pure vanilla extract really adds to your recipes. Don’t use the imitation if you can help it.
  • Salt
  • Semi-sweet chocolate chips
  • Water

How to make popcorn balls – 

To make perfect popcorn – 

  • Pour the oil into a large pot with a lid and heat over medium heat.
  • Once the oil has been warmed for a few minutes, put two popcorn kernels into the pot, cover and wait for them to pop. Once popped, remove them from the oil and discard. Pour the popcorn kernels in, doing your best to make a single layer, and cover. Remove the pot from the heat for a count of 25 seconds, bringing all the kernels to an even temperature.
  • Return pot to heat and once the popping begins, shake the pot bake and forth above the burner every 20-30 seconds. Repeat this until the popping begins to slow, and removing from heat when length of time significantly increases between pops.
  • Pour popcorn into a large bowl and clean the pot.

To make the balls of popcorn – 

  • Put the butter in the pot and melt over medium heat. Once butter has melted, add the marshmallows and stir until entirely melted. Turn off heat and whisk in the PB2 Organic Peanut Butter Powder, vanilla and salt. Mix well.
  • Add the popcorn back to the pot and stir with a rubber spatula to completely coat. 
  • Coat your hands with butter or cooking spray and form 10 balls, about 2 ½ inches in diameter. Place on parchment or wax paper. 

To make chocolate drizzle – 

  • In a small microwavable bowl, put the chocolate chips and ¼ teaspoon of canola oil. Heat in the microwave for 30 seconds and stir. If the chips have not melted, place back into the microwave for 10 second increments, stirring in between. 
    Use a fork to drizzle the chocolate onto the popcorn balls.

To make peanut butter drizzle – 

  • In a small bowl, combine two tablespoons of PB2 Organic Peanut Butter Powder with the water and mix well. Drizzle over the popcorn balls.

How do you store popcorn balls?

highly recommend that these be made the day you plan to serve or eat them as they will taste the best.
If you’d like to store them, wrap each ball tightly in plastic wrap and store in an airtight container up to four days.

Equipment

Ingredients

Popcorn Balls

  • 3 tablespoons canola or vegetable oil more or less, to evenly cover the bottom of your pot
  • 1/2 cup uncooked popcorn kernels
  • 6 tablespoons butter plus additional for hands
  • 10 ounces miniature marshmallows
  • 1/2 cup PB2 Organic Powdered Peanut Butter
  • 1/2 teaspoon pure vanilla extract
  • 1/2 teaspoon kosher salt

Chocolate Drizzle

  • 1/4 cup semi-sweet chocolate chips
  • 1/4 teaspoon canola or vegetable oil

Peanut Butter Drizzle

  • 2 tablespoons PB2 Organic Powdered Peanut Butter
  • 5 teaspoons water

Instructions

Popcorn Balls

  • Add the oil to a large pot set on medium heat.
  • To test if the oil is hot enough, place two popcorn kernels into the hot oil, cover with lid and wait for them to pop. Once they have popped, remove them with a spoon and throw away. Add the ½ cup of popcorn kernels to the pot in as even a layer as possible and cover. Remove the pot from the heat to a count of 25 seconds. This will bring all kernels to an even temperature.
  • Return pot to heat and once kernels begins to pop, shake the pot back and forth just above the burner every 20-30 seconds. Repeat process until popping starts to slow and time increases between popping.
  • Pour popcorn into a large bowl and clean the pot.
  • Place the butter into the pot and heat over medium heat. Once butter has mostly melted, add the marshmallows and stir until they are completely melted. Turn off heat and whisk in the PB2 Organic Peanut Butter Powder, vanilla and salt. Mix until well combined.
  • Add the popcorn back to the pot and with a rubber spatula, mix until popcorn is completely coated.
  • Place some butter on your hands or spray with cooking oil. Form the popcorn into 10 balls, about 2 ½ inches in diameter and place onto parchment or wax paper.

Chocolate Drizzle

  • Place the chocolate chips into a small bowl with the ¼ teaspoon of canola oil. Heat in the microwave for 30 seconds and stir. If chocolate hasn't melted, microwave again in 10 second increments, stirring in between until completely melted. Using a fork, drizzle the chocolate over each of the popcorn balls.

Peanut Butter Drizzle

  • In a small bowl, mix 2 tablespoons of PB2 Organic Powdered Peanut Butter with the 5 teaspoons of water. Using a clean fork, drizzle the peanut butter over the popcorn balls.

Notes

I found it easiest to combine the popcorn with the marshmallow mixture in the pot, but you could also use a large bowl as well.
